Roasted Monkfish tails

Recipe for Monkfish wrapped in Pancetta


Easy- My daughter’s signature dish

Clean monkfish tail remove membrane and central bone

Cover tail with a pesto paste (Sun dried tomatoes, garlic, olive oil, basil, and a hint of Chilli (optional)) top with thinly sliced mozzarella.

Wrap the entire fish & paste in thin strips of pancetta.

Place on a baking tray and cook in oven for about 20-30minutes 180degrees –fan assisted; or190- 200 degrees if not

Serve on a bed of rocket and sweet potato mash.

This costs a bloody arm and a leg in a restaurant.

(Can be adapted for chicken)

I went to Wisbech once, only for a few hours, with a drop-dead gorgeous chap......sigh...

I lived in Wisbech for 5 years and believe me half of the town was uglier than a monkfish and as for the fairer sex well I daren't even go there. :twisted:
