When is it best to prune an Olive tree

I have a small olive tree in Spain planted in the ground,about 1.2m high and it is getting a bit like a bush now.

I also have one at home in a large pot which is running riot at +2.0m plus.

When is the best time too shape or prune?

Light prune in the Spring and a heavier prune (if required) in the summer Phil. Thats in the UK, dont know about in Spain. I'm sure someone on AFA will be able to advise re pruning in Spain -

In Spain pruning can be done after the harvest [Novembre /enero] ]but before the tiny white flowers appear.
Mature trees need light pruning every few years ,ask a local for the best advice as mine is er, mine

Thanks; thats as I suspected and had pruned in December

I got confirmation about pruning from the ex gardener. December is correct for Olive tree. For the Lemon tree cut back so only 5 leaves /branch in the winter after fruit has gone.
